Yaglamas

From Turkish Style Cooking but also in Turkish at Yemek and also on Youtube. Slice into wedges and then to eat, lift one layer with your fork at the thin end and roll to the other side.

Ingredients

  • Large white wraps 8 whole
  • Beef mince 500 grams
  • Brown onions 1 whole
  • Green capsicum 0.5 whole
  • Tomato passata 300 ml
  • Tomato paste 1 tbsp
  • Red chilli powder 1 tsp
  • Water (boiling) 2 cups
  • Cumin to taste
  • sauce

  • Yoghurt 0.5 cups
  • Garlic 2 cloves
  • White vinegar 0.25 tsp
  • Salt to taste

Steps

  1. Dice onion and capsicum 1cm.
  2. In oil on high heat fry beef mince until it changes colour, 6 minutes.
  3. Add onions and capsicum, fry for 5 minutes until softened.
  4. Add tomato paste and fry for a few minutes.
  5. Add chilli and stir through, then add passata and fry for 3 minutes.
  6. Add water, cover and simmer for 20 minutes.
  7. Mince garlic. In a small bowl mix sauce ingredients.
  8. When sauce nearly done, flat each flatbread loosely in quarters and dip edges in sauce.
  9. On medium-high heat fry each flatbread on both sides until black spots appear.
  10. Add salt, pepper and cumin to sauce.
  11. On platter, layer wraps with sauce.
