Sweet Potato Chips

From the Yotam Ottolenghi cookbook Simple. Dad has cooked this a few times. Can skip polenta, can add cinnamon. Works on a barbecue.

Ingredients

  • Sweet potato 3 whole (large)
  • Paprika (sweet, smoked) 1 tbsp
  • Garlic 3 cloves
  • Olive oil 100 ml
  • Sumac 1 tbsp
  • Salt to taste

Steps

  1. Preheat oven to 220 fan forced.
  2. Peel sweet potato and slice into 1.5cm thick chips.
  3. Crush garlic cloves.
  4. Mix sweet potatoes with everything except the sumac and tip onto tray.
  5. Roast for 25-30 minutes, stirring once or twice until golden-brown.
  6. Remove from oven, sprinkle sumac and salt over and serve.
