Salmon Bowl

From an Instagram reel Claudia found somewhere. For whatever reason the garlic in the rice turns green.

Ingredients

  • Brown rice 1.5 cups
  • salmon

  • Salmon 460 grams
  • Dried oregano 1 tbsp
  • Paprika 0.5 tsp
  • Onion powder 1 tsp
  • Garlic powder 1 tsp
  • Salt to taste
  • Pepper to taste
  • sauce

  • Mayonnaise 3 tbsp
  • Sriracha 3 tsp
  • Soy sauce 2 tsp
  • Sesame oil 1 tsp
  • Avocado 0.5 whole
  • Cucumber 2 whole
  • rice flavouring

  • Garlic 3 cloves
  • Soy sauce 3 tbsp
  • garnish

  • Fresh coriander 2 sprigs (0.5 cup)
  • Spring onions 1 whole
  • Sesame seeds to taste

Steps

  1. Bring a pot of water to a boil and add rice. Boil for 30 minutes.
  2. Slice avocado (halve and slice 4mm), spring onions (1cm), cucumbers (4mm rounds), coriander (moderately), mince garlic.
  3. Remove skin from salmon and dice into 1.5 cm ish bite sized pieces.
  4. Combine spices and toss through salmon.
  5. Combine sauce ingredients in a small bowl.
  6. On medium-high heat in oil, fry the salmon in batches. Add a little splash of soy sauce & sesame oil when nearly cooked.
  7. Drain rice well, return to pot on turned off burner, stir through minced garlic, soy sauce, salt and pepper.
  8. Plate cutely.
