Salmon

Made up but I suppose credit to Sydney Seafood School snapper recipe because it’s basically that but salmon (aka improved).

Ingredients

  • Potatoes 1 kg
  • Lemon 2 tbsp
  • Salmon (skin-on) 500 grams
  • Olive oil for frying
  • Butter for frying
  • White wine 2 tbsp

Steps

  1. Cut potatoes in half and then cover with water in large pot (hot if impatient). Boil until skewer soft.
  2. Juice lemon
  3. Mash potatoes with milk and butter to taste. Add salt and pepper.
  4. In pan on high heat, add olive oil and then butter, salt and pepper.
  5. Add salmon skin side down, keep pressure on top of it, add salt and pepper to top.
  6. After a few minutes, flip and fry until brown.
  7. Finish with white wine and lemon juice, then remove to plate and pour over juices
