Red Sauce Pasta

Ingredients

  • Rigatoni 500 grams (1 pack)
  • Brown onions 2 whole
  • Carrots 2 whole
  • Garlic 5 cloves
  • White sugar 2 tsp
  • Tinned cherry tomatoes 800 grams (2 tins)
  • Tomato paste 2 tbsp
  • Red wine 0.33 cups
  • Salt to taste
  • Pepper to taste
  • Peas 1 cup

Steps

  1. Chop onions roughly and throw into large saucepan on high heat.
  2. Chop carrots and toss with onions once onions are browned.
  3. Chop garlic and toss into pot once carrots are browned, fry for a bit.
  4. Add cherry tomatoes, tomato paste, sugar, wine, salt, pepper and stir.
  5. Simmer for 30 minutes, adding peas towards the end.
  6. Boil 3L of water, add 2 tbsp salt and throw pasta in for 10-12 minutes.
  7. Stir pasta into sauce and serve.
