Done with a pile of olives, threw them in with the garlic, then tomato paste, then added a quarter cup red wine, deglazed then cherry tomatoes and sugar, simmer for 10 minutes. Next time I should add passata and simmer longer maybe. Serving over orecchiettes, trying so hard not to forget to stir them.

Made this sauce for a spinach ricotta ravioli and it was delicious. Did one really big onion and used huge spanish garlic. Plenty of oil. Added 2 tbsp tomato paste soon after garlic, with heat pretty high, cooked it a bit. Then added maybe 1/3 cup red cask wine, properly fried it off for a bit before adding 3 cans diced tomatoes and half a can worth of water. simmered it for a good 15 min then added peas then stirred in the cooked ravioli (had a second pot boiling the ravioli). Squashed the tomatoes against the side of the pot a bit to try and get it a little thinner. Simmered with lid on mostly.

Did 2 cans diced tomatoes no passata 1 tsp sugar. Added onion then carrot then garlic + t paste then wine then diced tomatoes + sugar. Added maybe half a can worth of extra water but now its watery so.

Actually was pretty delicious. Not too strong and not watery at all. Carried it on the train to a potluck.

Making tonight. Just back from roadtrip. Throwing in a half tomato diced (leftover).

Used ‘large spirals’. Did not simmer it for 30, maybe 20 tops. No sugar. Nearly forgot the peas.
