Pad See Ew

Using a recipetineats recipe from the cookbook Dinner, gifted recently by Dad as a christmas present. This was the first recipe I used it for, and the first time I cooked noodles by myself. I went into eastwood and visited 5 different shops to source the ingredients, and was helped by lots of shop attendants trying to figure out what I was on about. Delightful recipe to cook, all goes into pan. I accidentally bought fresh rice noodles instead, worked great.

Ingredients

  • Rice noodles (wide, fresh) 500 grams
  • Chicken thigh 300 grams (2 whole)
  • Gai lan 4 whole (stems)
  • Eggs 3 whole
  • Garlic 2 cloves
  • Canola oil 3 tbsp
  • sauce

  • Light soy sauce 1 tbsp
  • Oyster sauce 1.5 tbsp
  • White sugar 2 tsp
  • Dark soy sauce 2 tsp
  • White vinegar 2 tsp

Steps

  1. Boil a kettle.
  2. Place noodles in a large bowl and pour over boiling water. Sit for a few min then drain.
  3. Dice garlic very finely. Separate gai lan stems from leaves. Chop stems to 5cm and cut leaves into large strips. Cut chicken into medium-long thin strips.
  4. Mix sauce ingredients in a bowl until combined.
  5. Heat 1 tbsp oil in frying pan on maximum heat.
  6. Add garlic, stir for 10 seconds until golden.
  7. Add chicken, cook for 60 seconds until white but still raw.
  8. Add gai lan stems, cook 1 minute.
  9. Add gai lan leaves, stir for 20 seconds until just wilted.
  10. Push pan contents to side and crack eggs in, scramble them then transfer pan contents to plate.
  11. Heat 2 tbsp oil in pan to smoking, then add cooked noodles and sauce and toss sparingly and with care for 2 minutes using 2 pan tools.
  12. Combine ingredients and serve right away.
