Orange and Almond Cake

From Claudia Roden via The Guardian. States unknown origin, lists Andalucia, Portugal, Livorno, Aleppo, Iberia. For tin, recommends a non-stick tin with removable base. Should be a very moist cake, but if still too wet leave in for a little longer.

Ingredients

  • Orange 2 whole (large)
  • Eggs 6 whole
  • Ground almond 250 grams
  • Caster sugar 250 grams
  • Baking powder 1 tsp
  • Butter to line tin
  • Plain flour to line tin

Steps

  1. Wash oranges (whole, unpeeled)
  2. Boil oranges in a little water for 1.5-2 hours until very soft. Let cool.
  3. Preheat oven to 170 degrees conventional
  4. Cut open oranges, remove pips, then puree with food processor
  5. Beat eggs
  6. Add all other ingredients to eggs and mix thoroughly
  7. Butter and flour a cake tin
  8. Pour mixture into tin and bake for 45 mins to 1 hour
  9. Cool in tin before turning out
