Nachos

From woolworths. Can use beef instead for easier cooking. Layer so there’s sauce on all the chips. Skip chicken up the beans for vego nachos.

Ingredients

  • Corn chips 230 grams (1 bag)
  • Salsa 300 grams (1 jar)
  • Brown onions 2 whole
  • Chicken thigh 0.5 kgs
  • Tinned black beans 400 grams (1 tin)
  • Pizza cheese 2 cups
  • Green capsicum 1 whole
  • Sour cream to taste

Steps

  1. Preheat oven to 200 conventional
  2. Cut vegetables and chicken into mid-sized pieces
  3. Fry vegetables, onion first then add each ingredient in sequence
  4. Separately, on high heat fry chicken in two batches
  5. Drain beans and combine with vegetables
  6. Add vegetables, chicken and salsa to a large bowl and mix
  7. Spread some mix over the base of a 30x20cm tray
  8. Sprinkle cheese layer
  9. Place a layer of chips
  10. Continue layering down these three ingredients until the tray is full
  11. Bake in the oven for 20-30 minutes until cheese is browned
