Nachos

From woolworths. Can use beef instead for easier cooking. Skip chicken up the beans for vego nachos. Layer so there’s some sauce on all the chips, but don’t mix chips in or they won’t be crispy.

Ingredients

  • Brown onions 2 whole
  • Green capsicum 1 whole
  • Chicken thigh 0.5 kgs
  • Tinned black beans 400 grams (1 tin)
  • Salsa 300 grams (1 jar)
  • Corn chips 230 grams (1 bag)
  • Pizza cheese 2 cups
  • Sour cream to taste

Steps

  1. Preheat oven to 200 conventional.
  2. Cut vegetables and chicken into mid-sized pieces
  3. Fry vegetables, onion first then capsicum once it's had a chance to brown.
  4. Separately, on high heat fry chicken in two batches.
  5. Drain beans and add to vegetables with the salsa. Simmer for a minute or two then add chicken.
  6. Layer chips, sauce and cheese into a large baking dish with some vegetables on the bottom and extra cheese on the top.
  7. Bake in the oven for 20-30 minutes until cheese is browned. Serve with sour cream
