Macadamia and White Choc Biscuits

This recipe is designed to imitate Subway cookies and is taken from Genius kitchen, who have rebranded themselves as food.com. Their website allows you to scale this recipe for any number of cookies. The cookies are ridiculously unhealthy, with huge amounts of butter sugar and chocolate, the website actually provides nutritional information. The cookies will continue cooking after being taken out and taste best soft, so take them out when lightly browned.

Ingredients

  • Chopped macadamia 1.25 cups
  • White chocolate chips 340 grams
  • Butter 450 grams
  • Brown sugar 1.67 cups
  • White sugar 1 cup
  • Eggs 3 whole
  • Plain flour 4.25 cups
  • Vanilla 1 tbsp
  • Baking soda 2 tsp
  • Salt 1 tsp

Steps

  1. Preheat oven to 180 degrees
  2. Mix flour, baking soda and salt in a large bowl
  3. Beat butter until creamy (Preferably in a mixer), add brown sugar and beat again
  4. Add eggs (one at a time, beating after each), add vanilla, beat, add flour gradually, mix well
  5. Add white chocolate and macadamia, mix only until blended
  6. Place dough on baking sheets and bake for 10-12 minutes (under-bake slightly for best results)
