Lentil Burgers

From Healthy Little Foodies (some health website) but with more spices, more eggs, more breadcrumbs and less sweet potato.

Ingredients

  • Carrots 1 whole
  • Brown onions 0.5 whole
  • Garlic 3 cloves
  • Olive oil 1 tbsp
  • Sweet potato 0.5 whole
  • Curry powder 1 tbsp
  • Paprika 2 tsp
  • Cumin 2 tsp
  • Lentils 0.5 cups
  • Eggs 2 whole
  • Breadcrumbs 1 cup
  • Iceberg lettuce 0.25 heads
  • Tomato 2 whole
  • Frozen potato chips 400 grams (0.5 bag)
  • Brioche buns 6 whole
  • Sliced cheese 12 whole

Steps

  1. Preheat oven to 200 degrees.
  2. Finely dice carrot, brown onion, garlic.
  3. Heat pot on medium, add oil, carrot, onion, garlic. Fry for 5 min.
  4. Finely dice sweet potato.
  5. Add sweet potato, curry powder, paprika and cumin to pot. Fry for 2 min.
  6. Bake chips for 30 min (?).
  7. Add lentils, 1.5 cups of water, salt and pepper to pot. Cover and simmer until soft. 25 min. Add more water as needed.
  8. Slice tomato, chop lettuce into 1.5cm strips.
  9. Remove mixture to cool in bowl.
  10. Add eggs, breadcrumbs, combine and shape into patties. To shape, lay down a large sheet of baking paper and pour some flour or breadcrumbs onto it, then squash and shape, dusting in the breadcrumbs/flour.
  11. On medium-high heat in oil, fry patties 3 at a time. 5 minutes per side.
  12. Toast buns.
