From the recipetineats cookbook Dinner. Their recipe has prawns, pork and anchovies. I took them all out and admittedly the flavour is fairly basic but these noodles are a lot of fun. Buy the fresh noodles (I got them vacuum packed from the fridge at New Yen Yen).

Ingredients

  • Hokkien Noodles (fresh) 250 grams
  • Brown onions 1 whole
  • Carrots 1 whole
  • Wombok (green cabbage) 2 cups (heaped)
  • Garlic 3 cloves
  • sauce

  • Oyster sauce 1 tbsp
  • Water 1.5 tbsp
  • Cornflour 1 tsp
  • Brown sugar 1.5 tsp
  • Dark soy sauce 2 tsp
  • Soy sauce 1.5 tsp
  • Canola oil 1 tbsp

Steps

  1. Cover noodles in hot water and sit for a bit.
  2. Halve onion and slice into 5mm pieces. Halve carrot and slice diagonally 3mm. Slice wombok into 25cm, then chop into halves. Dice garlic as fine as you can.
  3. Mix oyster sauce, water, cornflour, brown sugar, dark soy sauce, soy sauce together in a bowl.
  4. Drain noodles.
  5. On high heat, add 1 tbsp canola oil and onions, fry for 1min
  6. Add garlic, fry for 20 seconds.
  7. Add carrot and wombok, fry for 2.5 minutes.
  8. Add noodles and sauce, fry for 4.5 minutes until coated.
