College Bean Burritos

Enter if you dare. Not for the faint hearted. I.e. it doesn’t taste very good. This is to recreate the vegetarian experience of “Mexican Fiesta Night” at DLC. It must be very dry. The burrito must be sealed shut still missing most of the toppings, to then be torn open and salvaged with vegetables from the salad bar. If you’re interested in true authenticity, leave trays of them in a low oven a few hours before dinner service starts.

Ingredients

  • Brown onions 1 whole
  • Brown rice 0.5 cups
  • Tinned black beans 400 grams (1 tin)
  • Salsa 300 grams (1 jar)
  • Frozen wedges 400 grams (0.5 pack)
  • Large white wraps 4 whole
  • salad bar

  • Carrots 1 whole
  • Iceberg lettuce 0.25 heads
  • Shredded tasty cheese 0.5 cups (or whatever)
  • Sour cream to taste
  • Sweet chilli sauce to taste

Steps

  1. Preheat oven to 220 conventional.
  2. Dice onion 1cm.
  3. In pan on medium-high heat in oil, fry onion until singed, add black beans and salsa to pan.
  4. Bake wedges to packet instructions.
  5. Reduce oven heat, put filling into wraps and bake until dry.
  6. Grate carrot, slice lettuce, prepare salad bar. When burritos done, tear them open and attempt to right your wrongs.
