Cinnamon Rolls

From Ambitious Kitchen via Claudia. We made it to bring to a dinner party in Rouse Hill, and dutifully carried the cling-wrapped tray on the metro and for the 15 minute walk from the station. I maybe categorised these as Swedish because of Ikea.

Ingredients

  • Milk 180 ml
  • Butter 60 grams
  • Dry yeast 2.25 tsp
  • White sugar 50 grams
  • Eggs 2 whole (1 whole and 1 yolk)
  • Bread flour 360 grams
  • Salt 0.75 tsp
  • filling

  • Brown sugar 142 grams
  • Cinnamon 1.5 tbsp
  • Butter 60 grams
  • frosting

  • Butter 3 tbsp
  • Icing sugar 85 grams
  • Vanilla 0.5 tsp

Steps

  1. Warm milk to 45 degrees, melt butter.
  2. Separate yolk for one of the eggs, discard white.
  3. In mixmaster, combine milk and yeast, then add sugar, eggs, melted butter. Mix until well combined. Add flour and salt then knead with dough hook for 8 minutes. Add more flour if sticky.
  4. Rise dough 1-1.5 hours until doubled.
  5. Roll dough 5mm thick, about 40x30cm.
  6. Grease a large, deep tray with butter.
  7. Combine cinnamon and sugar.
  8. Spread butter across dough, then sprinkle cinnamon sugar mix across, leaving a 2cm margin at one of the narrow ends. Gently press the mixture into the butter.
  9. Tightly roll into a log, and then chop 2cm wide into about 15 pieces, using fishing line to cut.
  10. Place the buns in prepared tray and let them puff up for 30 minutes, covered, until touching each other.
  11. Preheat oven to 200 degrees conventional.
  12. Bake for 20 minutes until lightly brown.
  13. Beat all frosting ingredients in mixmaster then spread over warm rolls.
