Chinese Fried Rice

From recipetineats, the cookbook Dinner. Actually pretty quick to cook. Cook a few cups of rice and freeze them, then use them for this. Don’t worry about skipping shallots, and can add bacon to this.

Ingredients

  • Canola oil 2 tbsp
  • Brown onions 1 whole
  • Garlic 3 cloves
  • Mixed vegetables (frozen) 1 cup
  • Rice (cooked) 2 cups
  • Eggs 3 whole
  • Shallots 1 whole (sprig)
  • seasoning

  • Chinese cooking wine 1 tbsp
  • Light soy sauce 1 tbsp
  • Oyster sauce 1 tbsp
  • Sesame oil 2 tsp

Steps

  1. Dice onions (8mm squares) and garlic (as small as you can).
  2. In pan on high, heat 1.5 tbsp canola oil until smoking and add onions, garlic. Fry for 1.5 minutes.
  3. Whisk eggs in a bowl.
  4. Add frozen vegetables to frypan, fry for 2 minutes.
  5. Mix seasoning ingredients in a bowl.
  6. Add rice and seasoning to the pan, fry for 1.5 minutes.
  7. Push rice to side of pan, recentre empty space over burner, add 0.5 tbsp canola oil and scramble the eggs.
  8. Add shallots and combine. Serve.
