Cardamom Buns

From Manjula. She says the author of the cookbook she got it from is like the Stephanie Alexander of Norway. This was the first time I used a decilitre outside of a chemistry quiz, but I am assured that this is popular in Norwegian recipes.

Ingredients

  • Butter 150 grams
  • Milk 5.5 dl
  • White sugar 2 dl
  • Ground cardamom 2 tsp
  • Dry yeast 2 tsp
  • Plain flour 1 kg
  • Sultanas to taste
  • Eggs (or milk) to brush

Steps

  1. Melt butter in saucepan. Stir in milk and bring to body temp (finger test neither not nor cold), then add sugar and cardamom.
  2. Remove from heat. Add some of the mixture to a bowl and stir in yeast, leave to bubble and then combine again.
  3. Sift flour into a large bowl, make a well and pour in mixture.
  4. Knead together for 5 minutes then place in bowl, cover with plastic and leave to double.
  5. Preheat oven to 230 degrees conventional.
  6. Knock back dough and divide into 3 pieces.
  7. Taking one piece at a time, roll it into a log, make an indent and sow sultanas, then fold and roll the sultanas to the centre. Separate into 8 pieces and roll into circular buns, pushing exposed sultanas deeper so they don't burn.
  8. Arrange buns on trays seam side down and brush well with egg.
  9. Bake for 10-12 minutes until top is golden.
