Cajun Pasta Sans Chicken

From Claudia. Also cooked as whole chicken breasts sans pasta. Sauce coats the pasta in a really fantastic way.

Ingredients

  • Butter to fry
  • Garlic 4 cloves
  • Chicken stock 0.5 cups
  • Sundried tomatoes 140 grams
  • Spinach 2 cups
  • Double cream 1 cup
  • Parmesan 0.5 cups
  • Farfalle pasta 500 grams
  • seasoning

  • Brown sugar 4 tsp
  • Paprika (smoked) 3 tsp
  • Dried oregano 2 tsp
  • Salt 1.5 tsp
  • Garlic powder 1 tsp
  • Onion powder 1 tsp
  • Chilli flakes 0.25 tsp
  • Pepper 0.5 tsp

Steps

  1. Boil and salt water for pasta.
  2. Finely chop garlic. roughly chop sundried tomatoes, reserve oil. Shave parmesan.
  3. Combine seasoning ingredients.
  4. Heat frypan on medium. Melt butter and add garlic, fry until fragrant.
  5. Add stock, sundried tomatoes and spinach to pan and reduce for 3 minutes.
  6. Add pasta to pot and cook for 12 minutes.
  7. Add cream, parmesan and seasoning and combine to pan. Fry 4 minutes until thickened.
  8. Toss through pasta and serve.
