From Claudia. Also cooked as whole chicken breasts sans pasta. Sauce coats the pasta in a really fantastic way.
Ingredients
Butter to fry
Garlic4cloves
Chicken stock0.5cups
Sundried tomatoes140grams
Spinach2cups
Double cream1cup
Parmesan0.5cups
Farfalle pasta500grams
seasoning
Brown sugar4tsp
Paprika (smoked)3tsp
Dried oregano2tsp
Salt1.5tsp
Garlic powder1tsp
Onion powder1tsp
Chilli flakes0.25tsp
Pepper0.5tsp
Steps
Boil and salt water for pasta.
Finely chop garlic. roughly chop sundried tomatoes, reserve oil. Shave parmesan.
Combine seasoning ingredients.
Heat frypan on medium. Melt butter and add garlic, fry until fragrant.
Add stock, sundried tomatoes and spinach to pan and reduce for 3 minutes.
Add pasta to pot and cook for 12 minutes.
Add cream, parmesan and seasoning and combine to pan. Fry 4 minutes until thickened.
Toss through pasta and serve.

Too oily should use a lot less butter next time. Ended up using the full 300 grams of double cream. Used orecchiette pasta. Simmered the 4 min step for more like 10 min.
