From Claudia. Also cooked as whole chicken breasts sans pasta. Sauce coats the pasta in a really fantastic way.
Ingredients
Chicken breast500grams (2 whole)
Sundried tomato oil2tbsp
Butter3tbsp
Garlic4cloves
Chicken stock0.5cups
Sundried tomatoes140grams
Spinach2cups
Spinach1cup
Double cream1cup
Parmesan0.5cups
Farfalle pasta500grams
seasoning
Brown sugar4tsp
Paprika (smoked)3tsp
Dried oregano2tsp
Salt1.5tsp
Garlic powder1tsp
Onion powder1tsp
Chilli flakes0.25tsp
Pepper0.5tsp
Steps
Finely chop garlic. roughly chop sundried tomatoes, reserve oil. Shave parmesan. Dice chicken into large pieces.
Combine seasoning ingredients, reserve 1 tbsp then toss chicken in remaining seasoning.
Heat sundried tomato oil in a pan on medium-high. Sear chicken in batches.
Reduce heat to medium, deglaze pan with white wine. Melt butter and add garlic, fry until fragrant
Boil and salt water for pasta.
Add stock, sundried toamtoes and spinach to pan and reduce for 3 minutes.
Add pasta to pot and cook.
Add cream, parmesan and seasoning and combine, then add chicken. Fry 4 minutes until thickened.
Toss through pasta and serve.

Making tonight, not very convinced.

Used half paprika (ran out), tried to sub with a little cajun spice mix but very spicy so skipped chilli flakes

Didn’t chop sundried tomatoes, bought strips (still big but hopefully I survive)

Made tonight. Accidentally had roasted capsicum strips instead of sundried tomatoes. Didn’t really taste the capsicum but I think I missed the sundried tomato. The parmesan is important in the flavour, the cream important in the texture. Used dollop cream (no double available) and forgot spinach. The spices are delicious. The steps need some reworking, the butter probably isn’t that important, needs vegetables, probably doesn’t need stock. Tastes good but not the best of the 3 times I’ve made it.
