Bechamel

From Stephanie Alexander. Fine to make but just stir it all the time, heating the milk makes it easier to add to the roux.

Ingredients

  • Milk 600 ml
  • Butter 60 grams
  • Plain flour 60 grams
  • Salt to taste
  • White pepper to taste

Steps

  1. Heat milk to scalding and set aside
  2. Melt butter and stir in flour
  3. Stir mix frequently until slightly brown (a roux)
  4. Gradually add milk, stirring literally constantly or it will lump
  5. Cook for 10 minutes on lowest heat (ideally simmer mat), stirring
