Taken from food.com. Best done with overripe bananas, buy some, overripen them and chuck them into the freezer for later.
Ingredients
Bananas3whole
Butter250grams
White sugar1cup
Eggs2whole
Vanilla2tsp
Plain flour1.5cups
Baking soda1tsp
Salt1tsp
Steps
Preheat oven to 180 degrees fan forced.
Crush bananas
Mix butter and sugar, add eggs and banana
Sift in flour, soda, salt and add vanilla
Pour into bread pan and bake for 1 hour

Didn’t sift the flour. Crush banana in large bowl then add eggs and whisk a little, then add that to the rest. Ingredients should be reordered.

Making today with blueberries and none of my normal utensils

Success but zero structural integrity, berries very tasty. Used about 150g blueberries, some very large. Ran out of vanilla at like half a tsp, used baking powder not bicarb this time. Rose well very pleased. Very buttery. Fell apart when removed from the dish.
