Baked Beans

I lied - there is no oven. Called dad before cooking to ask how to imitate his baked beans, happy with the result. Very tasty over crumbly toast with lots of butter.

Ingredients

  • Brown onions 1.5 whole (or 2 medium ones)
  • Bacon (short cut) 150 grams (rashers, 5 rashers)
  • Garlic 3 cloves
  • Tomato paste 0.5 cups
  • Cannellini beans 800 grams (2 cans)
  • Chicken stock 0.5 cups

Steps

  1. Dice onion and bacon into small pieces, 8mm. Slice garlic thinly. Drain liquid from beans.
  2. In a large pot on medium-high heat, fry onion and bacon in oil for a few minutes until edges are browned, 5 minutes.
  3. Add garlic and tomato paste, fry for a minute or two.
  4. Add beans and stock, balance with salt and pepper. Cook for 7 minutes or so until dry and sauce clings to beans. Now is a good time to put some bread in the toaster.
