Apple Cinnamon Pancakes

I’m aware that this barely constitutes a recipe but that doesn’t change how nice it was to sit on the balcony on a pretty mid-autumn day with a bowl of pancakes. This is a bid to recreate apple cinnamon pancakes once served on Wally’s Walk at uni between classes by a fundraiser the Pacific Islander society were running. They had like 10 different topping options but this was the right choice.

Ingredients

  • Red apples 3 whole
  • Pancake mixture 325 grams (1 bottle)
  • Cinnamon 1 tsp (or so)
  • Whipped cream to serve

Steps

  1. Peel and core apples then slice into 5mm thin arcs.
  2. Add apples to pot on medium high heat with about 1cm of water and cinnamon, simmer until water is gone and apples are soft, stir now and again.
  3. Make pancake batter and fry them, then plate up.
