Apple Cinnamon Muffins

From recipetineats, promising to make fluffy, longlasting muffins. Needs more cinnamon. Don’t bother whisking egg before adding to bowl. Apple should be about 2 cups worth once chopped. Wholemeal flour is maybe more yummy, but can use plain.

Ingredients

  • Green apples 2 whole (large)
  • Butter 115 grams
  • Brown sugar 1 cup
  • Milk 0.66 cups
  • Eggs 1 whole (large 60 grams)
  • White vinegar 1 tsp
  • Wholemeal flour 2 cups
  • Bi-carb 1 tsp
  • Cinnamon 2 tsp
  • Salt a pinch

Steps

  1. Preheat oven to 200 degrees.
  2. Melt butter in saucepan.
  3. Dice apple into small pieces and line 12 muffin tray with paddycases.
  4. Whisk to combine melted butter and brown sugar.
  5. Add milk, then egg and vinegar. Whisk to combine.
  6. Scatter flour, baking soda, cinnamon and salt over batter. Whisk to minimally combine (clumps okay).
  7. Stir in apple chunks.
  8. Scoop into paddycases and sprinkle tops with a pinch of white sugar.
  9. Place in oven and turn oven down to 180 degrees. Bake for 20 minutes, rest in tin for 5, cool on racks.
