Anzac Biscuits

Yields: biscuits Cost: $0.33 per biscuit Difficulty: 2/10

From Nanna’s recipes, given to Mum by email. Originally used imperial measurements for weight, since converted. Simple and chewy, keeps well. Discovered a removed oven rack works as a cooling rack while making these. They don’t melt out that much, press pretty flat to help them along.

Ingredients

  • Butter 125 grams (4 oz)
  • Golden syrup 1 tbsp
  • Rolled oats 1 cup
  • Coconut 0.75 cups
  • Brown sugar 1 cup
  • Bi-carb 1 tsp (was 1.5)
  • Water (hot) 2 tbsp
  • Plain flour 1 cup

Steps

  1. Preheat oven to 160 degrees conventional.
  2. Melt butter, add syrup, then combine bi-carb and water in a cup and add that too.
  3. Combine oats, sugar and coconut.
  4. Mix wet and dry mixes together well, add flour and mix again.
  5. Spoon onto tray (dessert spoon, 1 inch or so balls), press flat and bake at 160 degrees for 12 minutes, turning halfway.
