Almond Frangipane

From Dad, who got it from an old recipe for Twelfth Night Frangipane Cake, which uses this as a filling and involves hiding 2 coins inside the tart. Quite quick to make, works great in croissants or as filling for a tart flan. The ground almonds don’t really need to be sifted.

Ingredients

  • Ground almond 100 grams
  • Icing sugar 100 grams
  • Eggs 1 whole
  • Butter 50 grams
  • Cointreau 2 tbsp

Steps

  1. Chop butter and allow to soften
  2. Sift the icing sugar and ground almonds into a bowl and combine
  3. Whisk egg
  4. Combine cointreau with egg
  5. Add liquid mix to dry mix, then add butter and combine
